Thanksgiving Wishes

While the holidays this year will look different for many of us, I hope each of you are able to take time to relax, enjoy, and be thankful for the good things this year has brought. Be it more time spent with those we love, time to finally tackle those projects we've been wanting to do, or a new view on life, despite the challenges 2020 has brought, there are things to be thankful for.
Personally, I am extremely grateful for the wide support I've received since starting CLBC earlier this year. Starting a new business during a pandemic was a risk, but everyday it is a chance I am grateful I was brave enough to take.
So in the spirit of sharing the things that make us grateful and happy, I want to share with you a recipe that makes me ecstatic this time of year!

This recipe was given to me by a dear co-worker in my last position. I honestly only make a half batch because I'm the only one in my house that likes sweet potatoes in any form. But if you can't have dessert in the disguise of a side dish at the holidays when can you?!
Leah's Sweet Potato Casserole:
- 4 to 5 large sweet potatoes
- 1/2 C. sugar
- 1/2 C. butter
- 2 eggs, beaten
- 1 tsp. vanilla
- 1/3 C. milk
For the Topping:
- 1/2 C. softened butter
- 1 C. light brown sugar
- 1/2 C. flour
- 1 C. chopped pecans
First, dice and boil potatoes until fork tender. Mash by hand, then add the sugar and butter. Let cool, then add the two eggs, vanilla and milk. Spread into a 9" x 13" baking dish. Then preheat the oven to 350 degrees while assembling the topping. Next, mix all of the topping ingredients together in a small bowl with a fork, until a crumbly texture. Spread over the sweet potatoes and bake at 350 for 25 minutes.
Then all you have to do is enjoy!!! I hope if you try this wonderful recipe it brings a smile to your face and a little bit of extra sweetness to the holiday.
